Pulled Jackfruit Torta
Drain and rinse jackfruit. Pull with your hands. In a bowl combine jackfruit with chili powder, garlic powder, oregano, cumin, salt, pepper, vinegar, and a splash or pineapple or orange juice.
Let marinate at least 10 minutes.
Then, in a pan over medium heat, add a little cooking fat. When hot, add jackfruit and sauce, cooking until jackfruit is nicely caramelized on the outside.
On a soft, round roll similar to the traditional Mexican bolillo, or torta roll, add jackfruit, refried black or pinto beans, sliced Oaxaca cheese, tomato, lettuce, mayonnaise, and pickled jalapeños sliced in half and then into quarter spears. Enjoy warm!
Pulled Jackfruit Bahn Mi
Drain and rinse jackfruit. Pull with your hands. In a bowl combine jackfruit with very thin slices of onion and jalapeño. Add a little sugar, a splash of vinegar, some soy sauce and fish sauce, and finely minced fresh garlic and ginger.
Let marinate at least 10 minutes.
In a small jar combine mayonnaise and Sriracha. Do a quick pickle of julienned carrots and thinly sliced cabbage in 1/2 cup water, 1/4 cup sugar, 1/4 cup vinegar and 1 tbsp salt, well combined. Alternatively, you can use carrots and cabbage that have been marinated in a little rice vinegar.
In a pan over medium heat, add a little cooking fat. When hot, add jackfruit and sauce, cooking until jackfruit is nicely caramelized on the outside.
On a long white roll, cover both sides with Sriracha mayonnaise. Top with jackfruit, thinly sliced, peeled cucumber rounds, pickled carrots and cabbage, thinly sliced jalapeño and fresh cilantro.
Pulled Jackfruit BBQ Sandwich
Drain and rinse jackfruit. Pull with your hands. Let marinate in your favorite BBQ sauce, at least 10 minutes.
In a pan over med-low heat, add butter and caramelize thinly sliced yellow onions, up to 30 minutes, lowering heat as needed to not burn your onions. Once done, season with a sprinkle of sea salt, mix and remove from pan.
Add a little more cooking fat and when hot, add jackfruit and sauce, cooking until jackfruit is nicely caramelized on the outside.
On your favorite bread, spread a little Creamy Roasted Red Pepper Sauce, melt cheddar cheese, top with pulled jackfruit and caramelized onions. Enjoy hot!
Cuban Style Pulled Jackfruit
Marinate jackfruit with a similar seasoning as you would Cuban pulled pork: use a mortar and pestle to combine the following ingredients, if you have one. Otherwise in a mixing bowl combine well crushed cumin seeds or ground cumin, garlic that has been put through a garlic press or pureed in a food processor, ground oregano, sea salt, a little olive oil, a splash of fresh squeezed orange juice and fresh squeezed lime juice.
Let jackfruit marinate at least 10 minutes. In a pan over medium heat, add a little cooking fat. When hot, add jackfruit and sauce, cooking until jackfruit is nicely caramelized on the outside.
Serve alongside well seasoned black beans, rice, and maduros.
