Creamy Citrus Slaw

Thinly slice head of cleaned white and/or purple cabbage. If you have precut slaw, you’re ready to go.

Cut scallions on a slight diagonal into long ovals.

Put cabbage in a large bowl and add freshly squeezed lime juice (start with 1 whole lime and then taste), a tbsp of something creamy like sour cream or mayonnaise, and a dash of cayenne and/or smoked paprika. Add scallions.

Season with salt to taste.


Thai Slaw

Julienne bell pepper, cucumber and carrots. Put cabbage, pepper, cucumber and carrots in a large bowl and toss with lime juice, sesame oil and fish sauce or soy sauce.

Season with a little salt to taste. Top with fresh cilantro and peanuts.


Kale and Cabbage Caesar

I’m going to be honest with you: the best thing to do here is make homemade caesar dressing if you can. If you don’t have the ingredients, go with a good bottled version. If you need a good homemade caesar dressing recipe, use this one from Samin Nosrat.

First, thoroughly wash and dry kale. Remove leaves from the thick stems. Pile all leaves on top of each other, roll up and then chiffonade, or cut into very fine tendrils. Place kale in a bowl and squeeze in juice of 1 lemon (or more, depending how much kale you have). Massage kale and then let sit.

In the meantime, slice head of cleaned white and/or purple cabbage. If you have precut slaw, you’re ready to go.

Toss cabbage with kale in the bowl. Dress greens with caesar dressing and serve with lots of parmigiano and something crunchy like salty, toasted nuts or croutons.
